MT Nutrition Team

The MT Nutrition Team is made up of senior-level students in the MTSU Dietetics program. We work together to develop programs, services, and events that provide nutrition education across campus. The Nutrition Team provides cooking demonstrations, support to Fitness programs, and is available for group presentations.

What We Do

1:1 Nutrition Education Sessions

  • There is a lot of information on about food, and it can be hard to know what sources to trust, how to know what works best for you, and what options exist. Our Nutrition Education Sessions are a great way to learn the basics, get questions answered, and talk with someone with a trusted knowledge-source. 
  • 1:1 sessions are included with all Training Programs and will be set up in the first session with your trainer or fitness specialist
  • To make an appointment without being a part of a Training Program, email fitness@mtsu.edu

Cooking Demonstrations

  • Our grant-funded nutrition cart has traveled all across campus (and off-campus) to provide cooking demonstrations around campus and at events. Cooking demonstrations are a great way to learn about food and drinks in a hands-on setting, while also learning some chef skills along the way!

Program Support

  • Our Nutrition Team supports several other Campus Recreation and MTSU programs. Examples include the providing nutrition guidance to students in the Freshman Fit program, one-on-one support for Personal Training clients, and leading sessions at our Youth Camps.

Group Presentations and Education

  • The Nutrition Team focuses on providing education to the MTSU Community and are able to give presentations on a variety of topics. This is a great way to receive credible and safe guidance on how to have a healthy diet.

Recipes:

 

Peanut Butter Protein Smoothie

Supplies

  • Blender

Ingredients:

  • 1 cup milk or milk alternative
  • 1 frozen banana
  • 1 scoop of chocolate-flavored protein powder
  • 2 tbsp of peanut butter or other nut butter

Instructions:

  1. Add milk and banana to your blender
  2. Add scoop of protein
  3. Add peanut (or other) butter
  4. Blend and enjoy!

Notes

  • Feel free to add your own twist by changing up the protein powder flavor or fruit used
  • Play around with the portions until you find what tastes best for you

Pesto Pasta with Chicken and Veggies

Supplies:

  • Medium-large pot, colander, and stovetop OR medium to large microwave-safe bowl and microwave
  • Knife (cut veggies)
  • Spoon (stir)

Ingredients:

  • 2 cups pasta (whole grain or regular)
  • 1 boneless, skinless chicken breast (about 3oz) cooked
  • 1 red bell pepper
  • 1 bag of frozen or steamable broccoli
  • ΒΌ cup pesto
  • 1 tbsp olive oil
  • 2 tbsp parmesan cheese

Instructions:

  1. Cook/drain the pasta following the instructions on the package
  2. While pasta is cooking:
    • Cook the broccoli following the instructions on the package
    • Cut up the bell pepper and chicken into bite-sized pieces
  3. While straining the pasta, put the oil, chicken, bell pepper, and broccoli in the pan used for the past on medium heat
  4. Once heated, add the pasta and pesto to the pan with the chicken and vegetables and mix it all together
  5. Serve topped with parmesan cheese

Notes

  • Feel free to add your own twist by changing up the meat or vegetables used
  • Play around with the portions until you find what tastes best for you
  • If you do not have a stovetop, you can buy pre-cooked pasta and chicken, add all ingredients except the cheese to a microwave-safe bowl, and heat in a microwave (topping with cheese at the end, of course!)
